I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool. I just purchased 2 sets of this Caphalon Cookware as gifts for my daughters. I have owned the same set for over 17 years and it is still going strong! Caphalon sells 2 space saver sets (a lower priced version and this set which is almost double the price). The difference is on the handle of each lid. The lower price version has a rubber handle that is not suitable for use in the oven. The lids on this (higher end) set have metal handles and can be used in the oven.
