The Kanso 6.5" Boning/Fillet Knife is a rigid knife with a razor-sharp edge and it's adept at key kitchen chores. For boning, the narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from the bone. Even fibrous tissue is no match for Shun's extremely sharp edge. It’s perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's 6.5" length is just right to glide through the body of the fish, quickly removing bones and skin for a perfect fillet. The contoured tagayasan handle provides a secure grip for excellent control. Shun Kanso boning and fillet knife is part of the Shun Kanso series. Kanso is a design principle based on zen philosophy. It means “simplicity,” but simplicity is achieved by eliminating the non-essential. In Kanso, QKA/Shun took away anything that doesn’t matter and kept everything that does: high-performance steel, razor-sharp edge, perfect balance, and precision cutting control. The steel is Japanese AUS10A highly refined, high carbon, vanadium stainless steel that takes a razor-sharp edge and holds it longer. This is the place to start your Shun Sora collection: the Sora Chef's Knife. It's used for all the same purposes as a chef's knife-all-around food preparation. This shorter length is particularly lightweight and highly maneuverable. Of course, like all chef’s knives, it is an all-purpose blade ideal for a wide variety of cutting tasks-slicing, dicing, and chopping small to medium-sized fruits, vegetables, and other foods. But the Sora Chef's has less curve than a Western chef's knife, which means it contacts the cutting board along with more of its length, so more food is cut per slice. With its curved belly, this Chef's knife can also be gently "rocked" through fresh herbs or spices to produce a very fine mince. Chef's Knife's Asian-style blade is light and agile. The Sora has a gentle roll off the tip compared to the large roll of a Western-style knife, so the Sora needs to be lifted less, making cutting more efficient. It's been two years since I've had this knife. Honestly, it is the best knife I've ever purchased. I think I would buy more... but I don't need to since it's still great.
