Great looking pan set I ordered two different sets one in mat and one in shiny out side metal. I find using a generous amount of oil in the pans helps since the insides have ridges easy clean up after the pans cool off and soak in water for a tiny bit wipes right out. I was excited when we received the set. I have to admit it took some getting used to, cooking with these is a bit different than cooking with the nonstick pans we normally have. I would recommend seasoning the pans before using, it helps to avoid sticking. I started a new blog and needed a new pan set that did its job and would photograph well. And I didn't want to spend a fortune. I use these pots and pans on a daily basis and bought them just before Thanksgiving 2018. I wanted to wait before posting a review to really put them through their paces. This set is perfect for real everyday cooking. I used them to cook both Thanksgiving and Christmas dinners and every meal in between and since. I've even made fried rice that came out so much better in the large frying pan than it ever did in a very expensive nonstick Food Network pan I bought just last year. They will get discolored on the bottom over time from the heat of the stove top and that rainbow discoloration everyone seems so concerned about is a natural chemical reaction of the steel. It does not affect the safety or taste of the food. Both are very easily removed with Bar Keepers Friend cleanser. This is not nonstick cookware, you must preheat the pan and add nonstick spray, oil or butter to prevent food from sticking. I personally hate nonstick pans, they require so much care and the coating always flakes or peels after a few years. This cookware has exceeded all of my expectations. It cooks beautifully and I don't have to be careful when cleaning it. Be aware that the pans are safe up 500 degrees, but the lids are only safe up to 350 degrees because they are tempered glass. I just recently purchased this set because Cuisinart is supposed to be a reliable household name and I liked that it was rated as safe nonstick stainless steel cookware! However the two smaller fry pans that came with the set have marks in them as if they’ve been scuffed so I’m not happy! Loveeeee this set! They are beautiful! If you have trouble with it “losing” its shine (inside) or tarnished its not (look at my photos). You have to treat this set like you treat a cast iron skillet “season” the pans after use. After a good hand wash dry the pans with a soft cloth, then dab a few drops olive oil (or oil if your choice) wipe the inside of each pan (you are coating the oil in the pan) and wah lah they are perfect again! As a chef for over 14 yrs. I can truly appreciate this set of cookware. They are durable enough to withstand the abuse in a professional kitchen. The non-stick coating works amazingly for those dishes that a chef does not want any oils or sprays to come in contact. Made an omelette, no spray, came right out after a slight shake of the pan.
